We love Kale - Cookbook Review

I am really behind on my cookery book reviews and I thought I would get the first one in today.  I received this book back in February, We Love Kale, over 100  Delicious & Healthy Hand-Picked Recipes.   This book is really different in that it was written by food bloggers, some of whom I know personally and who are my friends.  Lucky them to get to participate in such a wonderful opportunity as co-authoring a cookerybook!  I guess you can add the title of cookery book author to their cv's!

We Love Kale is a cookery book which focuses different ways to incorporate this leafy green vegetable into your diet.  Focusing on one ingredient throughout a whole book could be somewhat of a challenge, but  as this book proves, it can be done.  One might be tempted to think that having one ingrdient as the main focus in a whole book might be somewhat boring but this book is filled with  impressive kale recipes from breakfast and brunch, right through to bakes and desserts.

The fact that it was written by bloggers themselves is impressive as we know that these are real recipes, developed by real people and cooked in real kitchens.  I like that.  The health benefits of kale are featured alongside 10 easy ways to include kale in your everyday meals, involving a wide range of recipes featuring influences from around the world such as Spain, the Middle East, Taiwan, India and Vietnam amongst other countries. Also included are handy symbols which help you to know if the dish is vegetarian, vegan, dairy-free, gluten free and wheat free (there are also recipes including meat).

There are five main chapters in this book:

Breakfast and Brunch - tasty sounding recipes such as Kale Shakshuka, Sweet Green Pancakes and Kale and Mushroom Breakfast Muffins.

Snacks, Appetizers and Drinks - I would love to dip into the Baked Kale and Artichoke Dip and the  Kale, Sweetcorn and Leek Fritters sound delicious.

Main Courses - There were some recipes which really stood out to me,  including,  Taiwanese Pork Belly Buns with Pickled Kale, Kale, Bacon and Egg Rice Bowl and Lentils, Caramelized Onions and Kale with Roast Walnuts.

Soups, Salads and Sides:   These recipes sound really tasty  . . .  Spicy Moroccan Kale and Rice Soup, Hearty French Onion and Kale Soup and Vietnamese Chicken Salad.

Bakes and Dessert: (the most intriguing chapter to my mind, it is hard to imagine Kale as a dessert), recipes to try include Kale Tart with an Olive Oil Crust and Triple Rich Hidden Gem Brownies.
