It's rare t...I made this for dinner last night. It's rare that I make fried food because I don't like the lingering smell, but these did not need that long in the pan and were finished off in the oven, so I went with it. I added a layer of pasta sauce on top of the chicken schnitzel, then the bechamel. I mixed sharp cheese and parmesan for the topping. It was delicious.<br /><br />As you say, an occasional treat and one we enjoyed very much with some home made oven chips and a tossed salad. I scooped her out of the way just in time. I just used a skillet. Way calorific, but one split three ways wasn't too awfully bad I don't think.
