It's probably not necessary to do it, but I always do it anyways. I've got a question you might be able to clear up for me. I've never understood why these types of casseroles always call for the milk to be scalded. Of course I follow directions but never understood why I was doing it. Do you know why it's necessary or what would happen if I left out that step?
