I learned about Mexican flavours from you and both really love that spicy hit combined with freshness and creamy elements to balance it all out.

These were very easy to make. I used jalapeno instead of the green chilli and an improvised enchilada sauce as they don't sell that ready made here, but everything else was the same. They are quite delicious and like you served them with rice, salad and extra toppings on the side. Very hearty and thoroughly enjoyed by both of us.Mariehttps://www.blogger.com/profile/04088355577823930786noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-1392759069148158872013-08-10T17:18:04.036+01:002013-08-10T17:18:04.036+01:00Yum yum YUM!! Especially with a creamy chicken filling!! Pinning this one for later, absolutely! They look soooo good, wish I could have come over for dinner too. Mmm, mouthwatering... :)Aprilhttps://www.blogger.com/profile/10419620659567929127noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-21750183671520666392013-08-08T23:39:13.245+01:002013-08-08T23:39:13.245+01:00I think this looks great - to bad I don't have...I think this looks great - to bad I don't have them already made for dinner tonight!!!Bernideenhttps://www.blogger.com/profile/05323630851115338825noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-36280512662036966082013-08-08T20:41:46.116+01:002013-08-08T20:41:46.116+01:00these enchiladas look really good Marie!! love the...these enchiladas look really good Marie!! love them! send you huggsss!
gloriaGloria Bakerhttps://www.blogger.com/profile/03055543111865966546noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-59825187715017232242013-08-08T10:52:00.873+01:002013-08-08T10:52:00.873+01:00Linda, most of the time there are only the two of ...Linda, most of the time there are only the two of us. I normally freeze smaller portions for us to have at a later date. For these I would make the enchilada filling and roll it up in the tortillas, and then wrap each filled tortilla separately, then place all the wrapped tortillas into a plastic container or larger zip lock bag and freeze them without the sauce. Then you could just take them out as you want them! Sounds like a plan!Marie Raynerhttps://www.blogger.com/profile/00407913432222377267noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-65960300807658240262013-08-08T09:41:48.181+01:002013-08-08T09:41:48.181+01:00Your Receipe looks so very delicious....its hard t...Your Receipe looks so very delicious....its hard to fix a casserole like that when its just one person and I don't have very much room in my freezer either so I can't freeze any left overs. I could make a small portion of this too. I just may have to try this one cause it looks awfully good by your photos.

Linda K's Stitching Corner https://www.blogger.com/profile/13402775984447448430noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-55951431825591144462013-08-08T06:01:47.219+01:002013-08-08T06:01:47.219+01:00Looks like the sort of thing my lot will enjoy. Oddly the recipe I got from all those years ago in the Sunset cookbook used tinned tomatoes as well, so was a red sauce too.Marie Raynerhttps://www.blogger.com/profile/00407913432222377267noreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-38677981590626035512013-08-08T04:51:35.194+01:002013-08-08T04:51:35.194+01:00You could have used jalapeno peppers in a jar. In my experience, the enchilada sauce & salsas used a sweeter chili, almost akin to a paprika, that is used in more Indian cooking. For chicken enchiladas I've usually seen a more cream or white sauce used rather than the red enchilada sauce but I suppose it's a matter of taste. How did the boys like them?JanetL621https://www.blogger.com/profile/03634580446888259307noreply@blogger.com
