I will be making sauerkraut with most of them as it is easier for me to digest. I will also use your method above as the kids love cabbage. I remember once lightly frying the strips in a little soy and they loved that too. We visit a lady in a nursing home and they are used to having their veggies over cooked so that's how the chef cooks for them.
