Lancashire Hot Pot was a staple in school dinners when I was a kid. As for Coronation St., that was a hard one to say goodbye to when we moved to Wisconsin. My Mum and Dad still watch it so when I go home I enjoy watching it even though I don't know anybody (except for Ken). Do you remember Ena Sharples, Minnie Caldwell, Albert Tatlock, Annie Walker. They were the very first actors in the cast. Such great memories on this cold day in Wisconsin, so thank you. Ours was always made with lamb , these days if we have a leg of lamb as a roast dinner treat, I keep the leftover meat and gravy , and then turn it into a hotpot the following day. Alternatively I use diced lamb meat or very lean lamb neck chops, as you say, it’s truly delicious, especially on a cold winters day.
