Bacon Wrapped Salmon

We don't eat as much fish in this house as we should, especially oily fish . . . part of the reason for this is it's cost, and another part is that I am not overly fond of strong tasting fish . . . or oily fish.  As strange as it may sound, I just am not a lover of "fishy" fish.

I do enjoy a nice piece of salmon once in a while though . . . it's not overly fishy tasting,  and  . . . when cooked right, it can be downright delicious!  I often cooked it when I cooked at the Manor.   It was something the Mrs really liked.  She was always watching her waistline.

I'm not sure wrapping a healthy fish such as Salmon which is filled with omega fats and all things good for you in bacon is conducive to waist line watching or not.   I am only sure that it's mighty tasty . . . kind of like the ultimate in "Surf & Turf!"  Bacon makes everything taste better in my opinion, healthy or not!

It helps to keep the fish moist in this instance . . . and adds an extra depth of flavour . . . in addition to the fresh thyme.  It's really quite lovely . . . with a squirt of fresh lemon at the end, it went down a real treat.  A quick, easy and fairly healthy meal for two, which of course can be easily multiplied.   I am thinking it would be even more delicious done on the outdoor grill!

*Bacon Wrapped Salmon*
Serves 2
I love fish.  It's good for you, quick to cook and delicious!

2 (250g) salmon filets (4 ounces each)
4 rashers of thin cut smoked streaky bacon
several sprigs of fresh thyme
drizzle of olive oil
freshly ground black pepper
lemon wedges

Preheat the oven to 200*C/400*F/ gas mark6.  Have ready a small glass baking dish.
If desired, skin your salmon filets.  I don't like skin on mine, and so I like to remove it.  It's not that hard to do.  Tuck the thin end under the thicker end.  Top each with a spring of fresh thyme.  Wrap each with two rashers of bacon, stretching it slightly and making sure the ends are tucked onto the bottom when you place them into the baking dish.  Drizzle with a bit of olive oil.
Bake for 15 to 20 minutes until the salmon is just cooked through and the bacon is golden brown.  Take care not to overcook the salmon.  Squeeze some lemon over top and serve.

  2. It sounds lovely! Try wrapping it with parma ham, prosciutto or serrano ham. It's lovely! My husband (English) doesn't like eating fish too much so I have to get inventive with him.

  4. I love to read recipes from other lands, England being one of them :-) I do want to say, fish should not taste fishy (except perhaps the sardine or anchovy haha) if it's very very fresh. Salmon is wonderful and your recipe sounds very nice.

    As far as your site is concerned, I found it very difficult to read with the busy background, it seems a bit like a eye test for color blindness ...I would love to read more of your recipes from the UK...just make it easier...Cheers from Lindy in the USA

  5. Hi Lindy, you are correct of course fresh fish should NOT taste fishy, and I would never eat fish that was obviously off like that. What I meant by my saying that was I guess I was not fond of strong flavored fishes, like Mackerel and the like. I prefer fish with much milder flavors.

    About the background, if you are coming from a mobile device you need to give the page a bit longer to load. The background for my page is actually plain white, with patterned borders. My settings allow for only white on mobile devices, but because it is very photo oriented it can take a little bit to load. Hope this helps!!
