Buffalo Chicken Rolls

I am so excited to be showing you this delicious recipe today.  Buffalo Chicken Rolls . . .  I love, LOVE these.  They embody several things that I just adore  . . . the flavour of Buffalo Wings/Chicken . . . Blue Cheese Dressing  . . . sandwiches.  Mmmm . . .  Mmmm . . .  Mmmm.  What's not to love about all of those things . . .  AND that is not all . . .  no, that is not all . . .

They're quick to make.  They're simple to make and . . .  most important of all . . .  they're delicious!

You can make good use of leftovers if you have them . . . from the Sunday roast chicken, or  . . . you can pick up a rotisserie chicken to make them  . . . or (and I have been known to do this) you can poach  couple of chicken breasts to use or even use tinned cooked chicken breast meat.

They are economical and they are filling . . .  and that sauce is absolutely flipping gorgeous . . .  the Buffalo Sauce that is.  You can make your own Blue Cheese dressing, or you can use purchased Blue Cheese Dressing.   I have an excellent recipe for a Blue Cheese dressing you can make yourself here.

 These make a delicious and easy and quick week night supper. One that won't heat up the kitchen and one that the family will love, LOVE.  I served them with some oven roasted potatoes, but you could serve them with potato chips or salad or whatever.  No matter how you serve them, you will enjoy.  I guarantee!

*Buffalo Chicken Rolls*
Serves 6
The recipe makes a lot of buffalo sauce, but you can pass extra at the table if you wish, or keep in the refrigerator for several weeks.  Freeze if you want to keep it for longer.  Delicious sandwiches!

For the Buffalo Sauce:
125ml of water (1/2 cup)
125ml of white vinegar (1/2 cup)
125g of tomato ketchup (1/2 cup)
2 TBS liquid honey
60g of soft light brown sugar (1/4 cup packed)
60ml of hot sauce (I used Franks) (1/4 cup)
75ml of Worcestershire sauce (1/3 cup)
1 tsp smoked paprika, or to taste
1/2 tsp ground coriander
1 tsp salt, or to taste
black pepper to taste

You will also need:
1 small rotisserie chicken, meat shredded, skin and bones discarded (Will give you about 3 cups of chicken)
6 brioche hot dog rolls, toasted
3 TBS chopped red onions
blue cheese dressing
shredded lettuce
extra blue cheese for crumbling (optional)

Combine all of the ingredients for the sauce in a medium saucepan.   Bring to the boil and then reduce the heat to a simmer.  Simmer gently for about 10 to 15 minutes, until the sauce slightly thickens.  Taste and adjust seasoning as required.

Heat the chicken through.  Add enough sauce to moisten it generously.  Keep warm while you toast the buns.

Top the toasted buns with shredded lettuce and a portion of the chicken and sauce. Sprinkle with the red onions. Drizzle with blue cheese sauce and blue cheese crumbles (if using).  Serve immediately.


  1. I bet your home made buffalo sauce is great..I've never had this nor cheese you mean like a béchamel but w/ blue cheese added?

  2. No Monique, it's a blue cheese dressing. I think I put the link up there to it. It's like a salad dressing. The Buffalo sauce is the best. I would never buy store bought. My own homemade sauce is so much better and I get to control the burn factor! xoxo

  3. Oh, these look soooo GOOD, Funnily enough I've got Buffalo Chicken Wraps on the menu for tomorrow evening here. Your recipe for the sauce looks more interesting than the one I've been using, so going to make your sauce tomorrow! I like the smoked paprika & ground coriander in yours. We like them as wraps after having had them at a restaurant back home in the US. I like to use slivers of blue cheese--that dense saltiness and the kick of the sauce... YUM! Just wanted to say hi from a new follower, I'm not sure which blog I found you from as I was hopping around the other night - but just want to say thanks for the inspiration - I nearly had to resort to a packet casserole mix tonight as I had chicken breasts defrosted and one measly carrot and not much of an idea until I found your chicken casserole with cheesy dumplings - and wow! What a delicious meal from practically nothing I've got 2 fussy boys and they cleared their plates - so no doubt I'll be stalking you for more fab recipes - thanks again! x

  7. It sure is a word Ali! I do try to make my recipes very do-able! I am rather lazy when it comes to cooking! I did enough fiddly when I worked as a chef to last me a lifetime. Now I'm retired I take the easy route. Once in a long while I might do fiddly, but for the most part simplicity works for me! xoxo
